These latkes bring classic comfort with a low carb twist. Crispy on the outside and soft inside, they’re packed with cozy, savory flavor. Perfect for dipping or enjoying straight from the pan.

Instructions

  1. Shred the cauliflower and wring out excess moisture.
  2. In a bowl, mix the cauliflower, almond flour, onion, garlic powder, eggs, salt and pepper.
  3. Heat about 1/2 inch of vegetable oil in a skillet over medium-high heat.
  4. Scoop roughly 1/4 cup of mixture per latke into the oil and flatten gently.
  5. Fry for 3 to 4 minutes per side until crisp and golden. Transfer to a paper towel-lined plate to drain. Serve hot.
