Instructions
- Finely dice green onions (separating the green and white parts), and cut the Spam into cubes about ¼ inch x ¼ inch. Set aside.
- In a frying pan, add 1 tbsp of oil on high heat. Once oil is up to high temp, add diced Spam and cook for 2-3 minutes until you get a nice brown crust on the Spam. Transfer to a bowl and set aside.
- In the same frying pan, add 1 tbsp of oil on high heat. Once oil starts to lightly smoke, add cauliflower rice and the white parts of the green onion, stirring often. Cook for 2-3 minutes or until desired texture is reached.
- Then add the Spam back to the pan, and season with salt and black pepper. Mix well and continue to cook for an additional 1 minute.
- Finally, mix in the green parts of the green onion, transfer to a bowl and enjoy hot!
