  • 1 medium onion (yellow)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic clove
  • 1 tablespoon ginger
  • 1 green bell pepper (medium)
  • 2 medium ripe tomatoes
  • 1½ teaspoon salt
  • ¼ teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 1 pound cauliflower rice
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 3 cloves(whole)
  • 1 cinnamon stick

Instructions

  1. Mince garlic and ginger.
  2. Dice onions, green pepper, and tomatoes.
  3. Add olive oil, onion, garlic, ginger, green pepper, and tomato to a large pot.
  4. Sautée on medium-high heat for 7-10 minutes until onions become golden brown.
  5. Pour in spices and stir for 5-10 minutes on medium-high heat until a stew-like consistency is reached.
  6. Add chicken and stir for 3-4 minutes on medium-high heat until chicken is evenly coated with sauce.
  7. Pour in ¾ – 1 cup water until pot is half full.
  8. Stir 1-2 minutes to even out mixture.
  9. Turn down the heat to medium-low.
  10. Cover and let cook for 35-45 minutes, while stirring occasionally.
  11. Garnish with fresh cilantro prior to serving.
  12. While the chicken is cooking, add oil, cloves, and cinnamon to large skillet.
  13. Cook on medium heat for 2-3 minutes.
  14. Add cauliflower rice and mix for 3-4 minutes until even.
  15. Cover and cook on medium for 10-15 minutes until desired softness is reached.
