Instructions

Make easy peanut butter cookies:

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Combine peanut butter, egg, and sweetener in a mixing bowl and mix until combined.
  3. Roll out 15 one-inch sized cookies and place on lined baking sheet.
  4. Press down on the tops of cookies with a fork.
  5. Bake for 10-13 minutes.
  6. Let cool and serve. Store leftovers in a covered container to prevent drying out.

Make banana pudding:

  1. In a saucepan over medium-low heat, heat heavy cream until just before a simmer.
  2. Add in the vanilla extract and ba a extract. Remove from heat and set aside.
  3. In a bowl, whisk the egg yolks together. Add in the half cup of erythritol and mix well.
  4. Pour one quarter of the cream mixture into the egg yolks and whisk together.
  5. Continue to whisk and add in the xanthan gum and salt.
  6. Whisk about 2 more minutes. Then, add in the rest of the cream mixture.
  7. Pour pudding back into the saucepan and heat on low to thicken.
  8. Once pudding isn’t dripping off a spoon anymore, remove from heat and stir in butter. Whisk heavily.
  9. Place in a bowl and place plastic wrap directly on pudding.
  10. Refrigerate at least one hour.
  11. When ready, pour some of the pudding in the bottom of a trifle bowl. Layer with Virta-friendly peanut butter cookies. Repeat until all the pudding has been used up.
  12. Crumble any remaining cookies on top. Serve and enjoy or refrigerate a few more hours to allow for more cookie softening. Enjoy!
