Instructions
Make easy peanut butter cookies:
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- Combine peanut butter, egg, and sweetener in a mixing bowl and mix until combined.
- Roll out 15 one-inch sized cookies and place on lined baking sheet.
- Press down on the tops of cookies with a fork.
- Bake for 10-13 minutes.
- Let cool and serve. Store leftovers in a covered container to prevent drying out.
Make banana pudding:
- In a saucepan over medium-low heat, heat heavy cream until just before a simmer.
- Add in the vanilla extract and ba a extract. Remove from heat and set aside.
- In a bowl, whisk the egg yolks together. Add in the half cup of erythritol and mix well.
- Pour one quarter of the cream mixture into the egg yolks and whisk together.
- Continue to whisk and add in the xanthan gum and salt.
- Whisk about 2 more minutes. Then, add in the rest of the cream mixture.
- Pour pudding back into the saucepan and heat on low to thicken.
- Once pudding isn’t dripping off a spoon anymore, remove from heat and stir in butter. Whisk heavily.
- Place in a bowl and place plastic wrap directly on pudding.
- Refrigerate at least one hour.
- When ready, pour some of the pudding in the bottom of a trifle bowl. Layer with Virta-friendly peanut butter cookies. Repeat until all the pudding has been used up.
- Crumble any remaining cookies on top. Serve and enjoy or refrigerate a few more hours to allow for more cookie softening. Enjoy!
