Instructions
- Heat half the coconut oil in a hot wok.
- Pour the beaten eggs into the wok and cook for about a minute or until they’re the consistency of a lightly scrambled omelette. Carefully remove eggs from the wok and set aside.
- Wipe out the wok with paper towel and add the remaining coconut oil.
- Fry the ginger and garlic for about 1 minute. Add the onion, pepper, mushrooms and zucchini. Stir-fry everything until lightly browned and tender, about 2 minutes.
- Add the cauli-rice, egg, green onions, soy sauce and sesame oil.
- Stir fry everything together until heated through. Using a spatula, roughly chop the egg into smaller pieces as you stir.
- Garnish with fresh cilantro.
