- 10 sprigs fresh thyme (finely chopped)

- ½ small red onion (thinly sliced)
- 1 handful Italian flat leaf parsley (roughly chopped)

- ½ lemon (juiced)
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons capers (roughly chopped)
- 1 cup parmesan shavings
- 1 handful arugula

Instructions
- Season the beef with the thyme and lots of salt and pepper.
- Heat a heavy-based pan on the stove with the olive oil until it is smoking hot (can also be done on a scorching hot grill).
- Sear the beef in the pan for no longer than two minutes, just until it has color all around it and then remove it from the pan.
- Slice the fillet as thinly as you can with a sharp knife.
- Place each slice on your chopping board and flatten with the flat side of your knife, then lay each slice on a platter.
- Mix the sliced onion, parsley, mustard, lemon juice, olive oil and capers together and spoon it over the sliced meat.
- Season well with salt and pepper.
- Garnish the dish by scattering with parmesan shavings and arugula (and another glug of olive oil if necessary).
