  • 1 head cabbage

Low-Carb Cabbage Dumplings are a wonderful option for a weeknight dinner or meal prep. With ground pork, shrimp, and fresh ginger, these dumplings are low in carbs, at just 5.5 grams per serving. Preparing the cabbage leaves for wrapping is simple, making it easy to create a satisfying dish that aligns with low-carb eating. Serve them with your favorite dipping sauce for a complete meal that supports your health goals.

Instructions

  1. Slice the cabbage in half lengthwise and remove the core. Peel back the leaves carefully to keep them in one piece. You will need around 13 whole cabbage leaves for this recipe. Slice them down the center to yield 26 halves.
  2. Blanch the cabbage leaves in boiling water for 3-5 minutes to make them pliable. Note: Another method is to freeze the cabbage beforehand and thaw when ready to use. Set aside the cabbage leaves on a paper towel-lined plate to dry.
  3. In a large bowl, mix the pork, shrimp, ginger, garlic, green onions, sesame oil, soy sauce, egg and black pepper together. Next, place one heaping tablespoon of the mixture onto each cabbage leaf; fold the sides over and roll tightly into a ‘dumpling’. Repeat this process until all the cabbage leaves are stuffed and rolled.
  4. Next, add 1 tbsp of avocado oil to a large nonstick skillet over medium low-heat. Once hot, add in the cabbage dumplings seam-side down and fry over medium low heat for around 5 minutes.
  5. Turn the dumplings over and add in ⅓ cup of water. Place the lid over the pan and steam the dumplings for an additional 7 minutes.
  6. Serve the dumplings with your favorite low-carb dipping sauce and enjoy!
