Ingredients
- 2 tablespoons nutritional yeast
- 1 block extra firm tofu
- 1 shallot (finely chopped)
- 2 garlic cloves (minced)
- 1 cup Swiss chard (roughly chopped)
- ⅔ cup coconut milk
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon paprika
- 1½ teaspoon garlic powder
- 1 teaspoon white pepper
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1 teaspoon cayenne powder
- ½ teaspoon dried thyme

Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- Drain tofu and pat dry. Cut into 1-inch cubes.
- Transfer to a bowl and toss with all of the spices and 2 tablespoons of the olive oil.
- Place in a single layer on the baking sheet. Bake for 20-30 minutes.
- Meanwhile, in a skillet over medium-high heat, add the remaining olive oil, shallot and garlic. Cook for 3-4 minutes. Then, add the Swiss chard and cook until it is wilted, about 2-3 more minutes.
- Add the coconut milk and nutritional yeast. Let simmer 3-5 minutes.
- Remove the tofu from oven when done. To serve, divide both the chard and tofu in half and enjoy!
