- 10 pounds chitterlings
- 1 large turnip
- 2 onions(chopped into large pieces)
- 1 sweet bell pepper
- 2 garlic cloves, peeled
- 3 stalks celery
- 1 cup apple cider vinegar
- 1 bay leaf
- 2 tablespoons paprika
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon basil
- 1 tablespoon black pepper
- 1 tablespoon dried oregano
- ½ tablespoon fresh thyme
- ½ tablespoon white pepper

Instructions
- Clean chitterlings and remove all specks and fat. Rinse in salted water.
- Put chitterlings in large pot and fill water until all meat is covered.
- Bring to a boil and then drain all water. Rinse chitterlings and repeat process.
- Once, they have been boiled and rinsed twice, refill the pot with water again.
- Add the turnip, onions, bell pepper, garlic, celery, vinegar, and all the seasonings.
- Cover pot and allow to simmer for at least 3-4 hours until meat is white.
- When done, drain liquid and discard the vegetables, bay leaf and liquid. Cut chitterlings into small, bite-sized pieces. Enjoy!
