- 1 pound shrimp
- ½ cup almond flour
- 1 egg
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper
- 1 teaspoon black pepper
- 1 teaspoon white pepper
- ½ teaspoon fresh thyme
- ½ teaspoon oregano
- 2 tablespoons olive oil
- 2 cups lettuce (shredded)
- 3 smalls tomatoes (such as Sun Gold, cherry, and/or grape) (sliced)
- 2 stalks green onion (thinly sliced)
- 1 cup mayonnaise
- 1 fluid oz lemon juice
- 1 tablespoon whole-grain mustard
- 1 tablespoon Louisiana hot sauce
- 1 tablespoon parsley
- 1 favorite keto bread

A Po' Boy is a classic sandwich that can easily be adapted to fit a low-carb lifestyle. This version features perfectly fried shrimp, coated in almond flour and a medley of spices, making it a fun option for a weeknight dinner. With just 7 carbs per serving, it’s a smart choice for anyone watching their carbs. Layered with fresh lettuce, sliced tomatoes, and a tangy homemade sauce, it's an exciting way to enjoy a keto-friendly meal.
Instructions
- Heat the olive oil in a large skillet on the stove on low.
- In a shallow bowl, whisk the egg.
- In a separate shallow bowl, mix together the almond flour, paprika, garlic powder, onion powder, cayenne pepper, white pepper, black pepper, thyme, oregano and salt.
- Working one piece at a time, dip each piece of cooked shrimp in the egg, then in the almond flour mixture and then drop into the hot oil. Turn the heat up to medium-high.
- When each pice is golden brown, set on a plate to the side.
- In a large bowl, mix together the mayonnaise, mustard, lemon juice and hot sauce until well combined.
- Stir in chopped parsley and green onions.
- To assemble a sandwich, find your favorite Virta-friendly bread. Add fried shrimp, shredded lettuce, tomato slices and sauce. Enjoy!
