  • 4 chicken breast (boneless, skinless)
  • 1 onion (small, diced )
  • 1 tablespoon ginger (minced)
  • 4 garlic cloves (minced)
  • 6 oz tomato paste (canned)
  • 2 tablespoons olive oil
  • ¾ cup chicken broth
  • 1 tablespoon curry powder (or garam masala)
  • 1 teaspoon turmeric
  • ½ teaspoon cayenne powder (more or less per your heat preference)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon cinnamon
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 bay leaf
  • 12 oz coconut milk (canned, full-fat)
  • ½ lemon (juice from)

Instructions
