Ingredients

Crust:

  • ½ cup almond flour

  • 1 cup almond butter (or pecan butter)
  • ½ teaspoon liquid stevia (more or less as desired)
  • 1 teaspoon vanilla
  • ¼ cup butter (softened)
  • 3 eggs
  • 1 cup pecans (chopped)

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a small bowl, combine crust ingredients - almond flour, butter and erythritol. The mixture should be crumbly and well incorporated.
  3. In a cupcake pan, add one heaping scoop of the crust mixture. Use the spoon to pack in the crust so it doesn't come apart; it will be a thin layer and yield about 10 bites.
  4. Place in the oven to bake for about 8 minutes, or until slightly golden and crunchy.
  5. While the crust is baking, combine the almond butter, liquid stevia, vanilla and butter - in a medium mixing bowl.
  6. Add in the eggs, one at a time, and stir to thoroughly combine.
  7. Add in the pecans. Stir until they are evenly coated.
  8. Remove the cupcake pan from the oven when done, and evenly distribute the filling to each crust.
  9. Bake for about 18-20 minutes. Remove from oven and allow to cool until ready to eat!
