- Preheat the oven to 400°F.
- Roast zucchini and summer squash (or your favorite non-starchy vegetable) for 12-15 minutes, until hot, but not soggy.
- Meanwhile, combine the mayonnaise and garlic powder in a shallow dish.
- Chop the fresh cilantro. Cut lime into 6 wedges.
- When vegetables are done baking, remove from oven. Using tongs, roll the vegetables in the mayonnaise mixture.
- Sprinkle vegetables with cotija cheese, chili powder and fresh cilantro.
