- 1 green bell pepper, chopped
- 2 garlic cloves, minced
- 1 teaspoon Tony Chachere’s Cajun seasoning (or other seasoned salt)
- 16 oz ground beef (can sub any ground meat)
- 1 tablespoon olive oil

Instructions
- Rice the cauliflower raw (or buy rice cauliflower).
- Saute onions and green pepper in a large pan with lid until clear and soft. Transfer to bowl and set aside.
- In the same pan, brown ground meat until fully cooked and chopped fine. A higher fat content meat works best, but you can add oil if using too lean of a cut.
- Return the onion and peppers to the pan and add minced garlic.
- Add ½ cup of water to mix and moisten the mixture.
- Add cauliflower and season with cajun seasonings. Mix well.
- Cover pan and leave on low heat until cauliflower is soft. Stir occasionally. If mixture seems to dry, add additional water and raise temperature to steam the cauliflower.
