Instructions
- Add all the jicama, water, sweetener, cinnamon, and butter to a pot and simmer on low, stirring frequently.
- As your filling simmers, prepare the dough. Mix the cheese and almond flour in a microwavable bowl and microwave for 1 minute. Stir, then microwave for an additional 30 seconds.
- Once your cheese is melted, add your egg and baking powder and stir with a wooden spoon or spatula, or with your hands, until fully incorporated and mixed into a ball.
- On a cutting board, place the ball of dough between two slices of parchment paper and roll it out to a pie crust thickness and cut out 3 inch circles.
- Once your jicama has simmered for 30 minutes, remove from the heat and stir in butter.
- Fill each dough circle with 1 and a half tablespoons of filling and then fold the dough together around the filling and press the edges together to seal. You can also use an empanada press for this.
- Heat up the oil over medium heat in a frying pan and start adding the hand pies to the oil with a metal slotted spoon. Allow to fry for 30 seconds per side before removing the pie from the oil onto a plate lined with paper towels.
- Allow the pies to cool before serving.
