Instructions

  1. De-stem parsley, cilantro, and dill.
  2. Finely chop all the green.
  3. Combine green, eggs, salt and pepper into mixing bowl.
  4. Mix until well incorporated. The mixture should begin to appear slightly fluffy.
  5. Heat a pan and add oil.
  6. Add mixture to pan and spread it across pan for even thickness.
  7. When bottom begins to brown (~5min), flip and cook other side.
  8. Top with yogurt or cucumber yogurt.
