Instructions

  1. In a small bowl, add the cashews and ½ cup hot water. Soak for at least 10 minutes.
  2. Meanwhile, using a spiralizer, turn the zucchinis into noodles.
  3. Add the “zoodles” with the olive oil to a skillet over medium-high heat and cook until tender, about 2-3 minutes. Then, remove from heat.
  4. Zest the lemon and juice half of it. Add that juice, lemon zest, garlic, white miso paste, nutritional yeast, cashews, water, salt and pepper to a blender to make the sauce.
  5. Add the sauce to the “zoodles” in the skillet and stir to combine.
  6. Top with more lemon zest, hemp seeds and crushed red pepper to serve and enjoy!
