- Preheat oven to 375℉.
- Place your chicken breasts between two slices of plastic wrap and pound until flat. dividee into four total pieces and rub with 1 tablespoon olive oil, then sprinkle with salt and pepper. In a plastic bag or container, combine the pork rinds, Parmesan cheese and Italian seasoning. Add your four chicken breast halves to the bag and shake them up until totally covered.
- Place you coated chicken breasts on a roaster rack over a baking sheet and generously salt and pepper them. (The roasting rack will allow the breasts to crisp all the way around.)
- Sprinkle about ½ cup mozzarella cheese on each chicken breast and cook for 30 to 45 minutes, or until they reach an internal temperature of 180℉.
- Meanwhile use a spiralizer or zoodler to create zucchini noodles with the four zucchini. Discard the centers. Add garlic salt to zoodles and toss. Let sit until they’re ready to be cooked, then use a paper towel to dry the zoodles, as the salt will have drawn out extra moisture you want to remove.
- Add the zoodles to pan and let cook for 1 to 2 minutes, just enough to get them hot. Too long will make them soggy, so watch closely!
- Add the marinara sauce and cook only until hot, then use a fork or tongs to plate your zoodles with your chicken on top. Drizzle any remaining marinara from the pan over you chicken, along with the remaining mozzarella cheese.
