  • 6 Japaneses eggplants (cut into bite-sized pieces or slices)

  • ½ cup white miso (fermented soybean paste)
  • 4 teaspoons ginger (peeled and finely grated)
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon soy sauce
  • 1 teaspoon distilled white vinegar
  • ¼ teaspoon finely ground black pepper
  • 1 tablespoon water
  • 3 teaspoons sesame seeds
  • 3 tablespoons scallions (thinly sliced, divideed)
