- 2 pounds flank steak
- 4 tablespoons extra-virgin olive oil
- 5 garlic cloves
- ¼ cup fresh cilantro
- ¼ cup fresh parsley
- ½ teaspoon salt (plus more for seasoning steak)

- ½ teaspoon cayenne pepper
- 1 cup bell pepper (sliced thinly)
- 4 tablespoons onion (chopped)

Instructions
- Preheat oven to 350 degrees (F). Line a baking sheet with aluminum foil and set aside.
- Butterfly the flank steak.
- Chop the garlic cloves and fresh herbs.
- Mix together the olive oil, cilantro, parsley, garlic, cayenne, salt and pepper.
- Spread the spice mixture all over the butterflied steak.
- Line the steak with sliced peppers.
- Roll the steak across the grain and tie with butcher’s twine or hold using food grade elastic bands.
- Generously salt the outside of the steak.
- Lay the steak – roll side down – on the lined baking sheet.
- Bake for 1 hour. Once done, let it rest for 15 minutes before cutting to serve.
