Instructions

  1. Preheat the oven to 400°F.
  2. Coat a baking sheet with cooking spray.
  3. Place the chicken breasts between two sheets of wax paper.
  4. Flatten the breasts with a mallet until the breasts are ¼ inch thick.
  5. Spread each breast with 1½ teaspoons of mustard and top with cheese, carrot and celery.
  6. Starting at the short side, roll each breast around the vegetables. Secure with toothpicks.
  7. Place on the prepared baking sheet.
  8. Spread each chicken breast with ½ tablespoon of Italian dressing.
  9. Bake for 20 minutes, or until the thickest portion registers 160°F on a thermometer and the juices run clear.
