Instructions
- Rinse the beet green in a sink filled with cold water. Drain and rinse a second time, then dry on a clean dish towel. Place green on cutting board and remove any particularly woody parts of the stems. Cut remaining stems and leaves into bite-sized pieces. Set aside.
- In a large skillet or 3-quart saucepan, cook bacon until lightly browned on medium heat (or heat 1-2 tablespoons of bacon fat). Add onions and beet stems; cook over medium heat 5 to 7 minutes, stirring occasionally, until onions soften and start to brown. Stir in garlic, cook a minute more.
- Add water to the hot pan, stirring to loosen any particles from bottom of pan. Stir in sweetener and red pepper flakes. Bring mixture to a boil.
- Add the beet green, gently toss in the onion mixture so the green are well coated. Reduce heat to low, cover and simmer for 5-15 minutes until the green are tender. Stir in the vinegar and season with salt. Enjoy!
