- 1 tablespoon lard (or butter or any cooking oil)
- ½ red onion (sliced)
- 1½ pound pork belly
- 1 packet Tamarind Soup Mix (common brands: Knorr, Mama Sita’s, Nora)
- 6 cups water
- 1 tomato (diced)
- ½ pound eggplant (cubed)
- 1 cup string beans
- 6 cups fresh spinach (or traditional water spinach)

Sometimes you simply long for the familiar taste of sinigang (pork). Instructions
- Heat the lard/butter/oil in a large pot over medium to high heat.
- Add in sliced red onion and saute them in the cooking fat until softened.
- Add the pork belly and cook until brown on both sides.
- Add the tamarind soup mixture and water to the pot, and cook for about 5 minutes.
- Add diced tomato. Note: the purpose for the tomato is to give out a subtle hint of color to the soup.
- Let the meat reduce with the broth until desired tenderness is achieved. This can take up to 45 minutes.
- Then add your eggplant and string beans to soup and cook for about 5 minutes or until tender. Then turn off the heat, add spinach, and cover. Allow spinach to wilt before serving.
