Looking for the most delicious spicy chicken nachos? Prepare this delicious recipe next time you have a craving for low carb spicy chicken nachos. Made with only a few ingredients, this low carb spicy chicken nachos is simple to whip up and truly mouthwatering while also a good choice for a diabetes-friendly diet.
Instructions
- Make the cheese “chips” as following: Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper. Place uniform tablespoon-sized heaps of the shredded cheddar cheese onto the baking sheet. Place in the oven for 6-8 minutes, until the edges start to brown. Allow the cheese chips to cool slightly in the pan, and then transfer to paper towels to drain and get crispy.
- Meanwhile, finely dice the chicken, avocado, and tomatoes. Mix the spices together (paprika, garlic salt, cumin, and cayenne pepper), then stir into the chicken mixture.
- After the cheese chips have cooled for at least 15 minutes and are crispy, top them with spoonfuls of the chicken mixture. Sprinkle a few shreds of mozzarella cheese on top of each chip.
- If desired, place in the oven for a couple of minutes, just enough to melt the mozzarella cheese on top. Check on them often, and don’t heat them too long, or the chips will melt.
