Instructions

  1. Make the cheese “chips” as following: Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper. Place uniform tablespoon-sized heaps of the shredded cheddar cheese onto the baking sheet. Place in the oven for 6-8 minutes, until the edges start to brown. Allow the cheese chips to cool slightly in the pan, and then transfer to paper towels to drain and get crispy.
  2. Meanwhile, finely dice the chicken, avocado, and tomatoes. Mix the spices together (paprika, garlic salt, cumin, and cayenne pepper), then stir into the chicken mixture.
  3. After the cheese chips have cooled for at least 15 minutes and are crispy, top them with spoonfuls of the chicken mixture. Sprinkle a few shreds of mozzarella cheese on top of each chip.
  4. If desired, place in the oven for a couple of minutes, just enough to melt the mozzarella cheese on top. Check on them often, and don’t heat them too long, or the chips will melt.
