  1. Slice the green bell peppers into ¾″-1” thick rings, for a total of 4 rings.
  2. Melt butter in a skillet over medium-high heat.

  4. Cover the skillet with a lid and allow the eggs to cook until the white part is set and the yolk reaches your desired doneness. This typically takes about 3-5 minutes.
