Air Fryer Chicken Nuggets are a fantastic option for a quick weeknight dinner. With just a few ingredients like chicken breasts, coconut flour, and toasted sesame seeds, you can whip up a low-carb meal that clocks in at only 5 grams of carbs per serving. These nuggets are crispy on the outside and tender on the inside, making them a great choice for family gatherings or meal prep. Plus, they fit seamlessly into a keto-friendly lifestyle, supporting your health goals without sacrificing taste.

Instructions

  1. Preheat your air fryer to 400 degrees F.
  2. Cut the chicken into 1 inch pieces, dry off, and place into a bowl. Toss with salt and oil until coated.
  3. Place the coconut flour and pepper in a large plastic bag and shake to combine. Add the chicken and shake until coated.
  4. Place the egg whites in a large bowl and add in the chicken nuggets.
  5. Add the sesame seeds to the large plastic bag, then place the nuggets back into the bag and shake until well coated.
  6. Spray the air fryer basket with cooking spray. Place the nuggets into the basket, making sure to not crowd them or they won't get crispy.
  7. Cook for about 6 minute at 400 degrees F. Flip each nugget and add more cooking spray. Then, cook an additional 5-6 minutes until no longer pink inside (and/or internal temp reaches 165 degrees F), with a crispy outside. Serve warm and with your choice of dipping sauce!
  8. (OPTIONAL) NUTTY DIPPING SAUCE: Whisk the following ingredients together in a medium bowl until smooth: 2 Tbsp almond butter, 4 tsp soy sauce or tamari, 1 Tbsp water, 2 tsp rice vinegar, 1 tsp sriracha to taste, ½ tsp ground ginger, and ½ tsp Virta-friendly sweetener.
