Instructions
- Combine the tofu, 1 tablespoon lemon juice, and mustard in a blender, food processor, or use an immersion blender (stick blender).
- Process and stop frequently to scrape down the sides of the container.
- With the machine running, add oil a few drops at a time.
- Gradually add about 2 tablespoons of the oil in a steady stream.
- Slowly add 1 tablespoon of the lemon juice.
- Dribble in half of the remaining oil and then the remaining 1 tablespoon lemon juice.
- Slowly add the rest of the oil.
- Taste and season with salt and pepper.
- Store in the refrigerator.
