- Over medium heat, coat medium nonstick skillet. Add onions and peppers.
- Stirring occasionally, cook for about two minutes or until sizzling.
- Add the tomatoes and cook for additional minute or until the tomatoes start to soften.
- Pour in egg and egg whites and sprinkle with seasoning.
- Reduce heat to low and cook for about 5 minutes. Lift the cooked edges with a fork so the uncooked egg can run underneath, or until the bottom sets.
