Instructions

  1. In a large bowl, whisk together almond flour, erythritol, baking powder and salt. Set aside.
  2. Melt the cheese in a microwave-safe bowl.
  3. Add the egg and vanilla to the melted cheese.
  4. Add the wet ingredients to the dry ingredients.
  5. Mix dough together with your hands until it forms a ball. Add more almond flour if needed.
  6. In a shallow pot or skillet on the stove, heat the olive oil.
  7. Pull off a chunk of the dough, form into a ball and place in hot oil.
  8. Cook a few beignets at a time for about 5-6 minutes until golden brown.
  9. While still warm, dust with super fine unsweetened shredded coconut.
