Instructions

  1. Heat butter over medium-low heat in a large pot. Add in anchovy and garlic, stirring around until the garlic softens and anchovy start to separate a bit. Avoid frying or browning the ingredients as a sweetness is desired over a nutty flavor. Stir frequently and let the garlic and anchovy cook slowly.
  2. Rinse the cabbage strips with cold water and let drain.
  3. Add cabbage to pot and stir well with garlic and anchovy. Be sure to coat the cabbage evenly. Feel free to sprinkle a big pinch of salt onto the cabbage.
  4. Cover the pot and turn down the heat to let the cabbage slowly cook over low heat, for about an hour.
  5. Cook until the cabbage reaches a light green color and holds its own shape.
  6. Stir in butter with a wooden spoon and shake the pot a bit as it will let the cabbage become a bit creamy while diluting the saltiness from the anchovy.
  7. Season with salt and pepper to taste and squeeze in half of a lemon into the pot.
  8. Stir and add in parsley if desired.
  9. Spoon into bowls and grate Parmesan cheese on top prior to serving.
