- Heat butter over medium-low heat in a large pot. Add in anchovy and garlic, stirring around until the garlic softens and anchovy start to separate a bit. Avoid frying or browning the ingredients as a sweetness is desired over a nutty flavor. Stir frequently and let the garlic and anchovy cook slowly.
- Rinse the cabbage strips with cold water and let drain.
- Add cabbage to pot and stir well with garlic and anchovy. Be sure to coat the cabbage evenly. Feel free to sprinkle a big pinch of salt onto the cabbage.
- Cover the pot and turn down the heat to let the cabbage slowly cook over low heat, for about an hour.
- Cook until the cabbage reaches a light green color and holds its own shape.
- Stir in butter with a wooden spoon and shake the pot a bit as it will let the cabbage become a bit creamy while diluting the saltiness from the anchovy.
- Season with salt and pepper to taste and squeeze in half of a lemon into the pot.
- Stir and add in parsley if desired.
