Instructions

  1. Preheat oven to 350°F.
  2. Cut bell peppers in half and remove seeds and ribs.
  3. Place peppers in a microwave-safe dish, skin side up.
  4. Add a tablespoon of water to the dish, cover, and microwave for 2 minutes.
  5. Drain any excess liquid.
  6. Using a large skillet, cook turkey over medium-high heat. Remove from skillet and set aside.
  7. Add mushrooms to the same skillet and cook until liquid from the mushrooms seeps out.
  8. Add the cooked turkey back to the skillet and combine. Turn off heat.
  9. Stir in marinara sauce and garlic powder.
  10. Place peppers in a baking dish and portion the meat mixture amongst the four pepper halves.
  11. Top peppers with cheese and pepperoni.
  12. Bake for 20-25 minutes, or until cheese becomes melted and peppers reach desired texture.
