These latkes bring classic comfort with a low carb twist. Crispy on the outside and soft inside, they’re packed with cozy, savory flavor. Perfect for dipping or enjoying straight from the pan.
Instructions
- Shred the cauliflower and wring out excess moisture.
- In a bowl, mix the cauliflower, almond flour, onion, garlic powder, eggs, salt and pepper.
- Heat about 1/2 inch of vegetable oil in a skillet over medium-high heat.
- Scoop roughly 1/4 cup of mixture per latke into the oil and flatten gently.
- Fry for 3 to 4 minutes per side until crisp and golden. Transfer to a paper towel-lined plate to drain. Serve hot.
