Ingredients

  • 1 small onion (diced)
  • 2 garlic cloves (minced)
  • 1 pound ground beef
  • 2 stalks celery (diced)
  • ¾ cup mushroom (diced (you can also dice a 4 ozs. can of mushrooms)
  • 1 cup crushed tomatoes
  • salt & pepper to taste
  • (Cauliflower Topping:)
  • 1 medium cauliflower (cut into florets)
  • ¼ cup water
  • 2 tablespoons butter
  • ½ cup heavy cream
  • ½ cup shredded cheese

Instructions

  1. Beef Mixture:
  2. Heat the olive oil in a large saucepan. Add the onion and garlic and sauté on medium heat until soft and translucent.
  3. Add the ground beef and cook, stirring frequently, until it is browned and cooked through.
  4. Add the celery, mushrooms, and crushed tomatoes and stir to combine. Reduce the heat to a simmer. Simmer uncovered for 10 minutes.
  5. Cauliflower Topping:
  6. In a large microwave safe bowl, add ¼ cup water and the cauliflower florets. Cover with plastic/saran wrap and cook on high for 8-10 minutes.
  7. Drain the cauliflower, allowing steam to escape. Dry cauliflower will help make a creamier mash.
  8. Transfer the drained cauliflower to a food processor. Add the butter, cream, shredded cheese, salt, and pepper. Process until smooth.
  9. To Assemble:
