Instructions
- Beat the heavy cream and vanilla extract in a bowl until stiff peaks are formed.
- Fold in the cream cheese and cottage cheese carefully.
- Add the gelatin powder and erythritol powder. Fold again carefully.
- Fold in the strawberries, coconut and walnuts.
- Cover bowl with plastic wrap, or pour mixture into a round bundt pan, and refrigerate for at least 4 hours before serving.
- To serve, dip bowl or pan in hot water for 20 seconds and then flip over to release pan.
