Cauliflower pizza crust is a fantastic way to enjoy pizza while sticking to your low-carb eating plan. With just a few key ingredients like cauliflower rice and mozzarella cheese, this recipe offers a simple solution for a weeknight dinner or meal prep. At only 3 carbs per serving, this crust provides a satisfying base for your favorite toppings without the added carbs of traditional pizza, supporting your journey towards better metabolic health.

Instructions

  1. Place pizza stone in oven and preheat to 450 degrees.
  2. Place cauliflower rice or crumbles in a large microwave safe bowl and microwave on high for 5 minutes.
  3. Spread cooked cauliflower on a towel to let it cool.
  4. Remove as much liquid as possible from the cooled cauliflower. You can do this by wrapping the cauliflower in a towel and squeezing. Repeat until all moisture has been removed. You can also try using a cheesecloth to help remove excess moisture.
  5. Transfer dried and cooled cauliflower to a large bowl and combine with cheeses, oregano, salt, pepper, red pepper flakes, and eggs. Use your hands to form a ball of cauliflower dough.
  6. Tear a piece of parchment paper the size of your pizza stone (or slightly smaller). Form the dough into a flat circle until your dough is of desired thickness.
  7. Carefully move the parchment paper with crust and place on the pizza stone.
  8. Bake for 10 to 12 minutes, just enough to get the crust crisp and sturdy.
  9. Remove the crust from the oven and top with desired toppings. Bake for another 15-20 minutes. Enjoy!
