Instructions
- Preheat oven to 350°F.
- In a medium-sized bowl, combine the egg whites and cream of tartar. Beat until soft peaks form. Set aside.
- In a separate large bowl, add the egg yolks, half the butter, half the vanilla extract, cream cheese and 2 tablespoons of the erythritol. Mix well to combine.
- To the egg yolk mixture, add the baking powder, almond flour and 1 teaspoon of the cinnamon.
- Gently fold in the egg white mixture into the egg yolk mixture.
- Spray a bundt pan with non-stick spray. Pour half the batter into the pan.
- In another bowl, combine the remaining cinnamon, butter and half of the remaining erythritol. Mix together with hands.
- Crumble this new cinnamon mixture onto the first layer of batter and add the baby.
- Pour the rest of the batter on top, ensuring the baby is covered.
- Bake 30-40 minutes until cooked through.
- While cake is baking, whip heavy cream until medium peaks form. Add in remaining vanilla extract and mix to combine. Set aside.
- In a separate bowl, combine the remaining erythritol and food coloring to your liking. Set aside.
- When cake is done, remove from oven and allow to cool completely.
- Top with whipped cream and colored erythritol. Enjoy!
