When you need to refresh your menu, pick this scrumptious recipe for low carb tomato bisque. With just a few ingredients, you can spice up your normal routine with this mouthwatering tomato bisque. Moreover, it is a ideal choice for a diabetes-friendly menu.

Instructions

  1. Rinse the tomatoes and basil leaves in cold water. Let dry.
  2. Put the olive oil and onions in a medium (3-4 quart) pot, and then brown over medium heat for about 5 minutes. Cook until the onions are light brown, soft, and translucent.
  3. Add the tomatoes, basil, and pepper to the pot. Cover and simmer for 10 minutes, or until the tomatoes are soft and cooked through.
  4. Allow the pot to cool for 5 minutes. Use an immersion blender (stick blender) to blend for 60 seconds, pulsing frequently to be sure no large chunks remain and move to a new pot or bowl.
  5. Rinse the pot, place a large sieve over it, and then strain the blended tomato mixture through it to remove any large pieces.
  6. Add the chicken broth to the tomato puree in the pot, and then warm it over low heat, until it starts to steam. Do not let it boil.
  7. Remove soup from heat, and then whisk in the cream.
  8. Salt to taste.
