Instructions
- Preheat your air fryer to 400 degrees F.
- Cut the chicken into 1 inch pieces, dry off, and place into a bowl. Toss with salt and oil until coated.
- Place the coconut flour and pepper in a large plastic bag and shake to combine. Add the chicken and shake until coated.
- Place the egg whites in a large bowl and add in the chicken nuggets.
- Add the sesame seeds to the large plastic bag, then place the nuggets back into the bag and shake until well coated.
- Spray the air fryer basket with cooking spray. Place the nuggets into the basket, making sure to not crowd them or they won't get crispy.
- Cook for about 6 minute at 400 degrees F. Flip each nugget and add more cooking spray. Then, cook an additional 5-6 minutes until no longer pink inside (and/or internal temp reaches 165 degrees F), with a crispy outside. Serve warm and with your choice of dipping sauce!
- (OPTIONAL) NUTTY DIPPING SAUCE: Whisk the following ingredients together in a medium bowl until smooth: 2 Tbsp almond butter, 4 tsp soy sauce or tamari, 1 Tbsp water, 2 tsp rice vinegar, 1 tsp sriracha to taste, ½ tsp ground ginger, and ½ tsp Virta-friendly sweetener.
