Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Whisk all dry ingredients and slowly add liquids, except the oil. Continue whisking until batter is smooth with none or few lumps, set aside to rest for 30 minutes.
- Once the batter has rested, use the oil to grease the muffin tins (about ½ teaspoon to each).
- Put the pan with just oil into the hot oven, until oil sizzles, around 5-6 minutes.
- Once sizzling, take out and immediately add batter, fill to about halfway in the cup; batter should sizzle on contact with oil (you may want to use a cup with a spout and some oven mitts!)
- Return the tray to the oven immediately and bake for 30 minutes.
- Open the oven door slightly and reduce the temperature to 300, and continue baking for 15 minutes to crisp.
- Once done baking, let sit 1 or 2 minutes to rest and serve warm or cold"
