  1. Preheat oven to 375 degrees Fahrenheit.
  2. Whisk all dry ingredients and slowly add liquids, except the oil. Continue whisking until batter is smooth with none or few lumps, set aside to rest for 30 minutes.
  3. Once the batter has rested, use the oil to grease the muffin tins (about ½ teaspoon to each).
  4. Put the pan with just oil into the hot oven, until oil sizzles, around 5-6 minutes.
  5. Once sizzling, take out and immediately add batter, fill to about halfway in the cup; batter should sizzle on contact with oil (you may want to use a cup with a spout and some oven mitts!)
  6. Return the tray to the oven immediately and bake for 30 minutes.
  7. Open the oven door slightly and reduce the temperature to 300, and continue baking for 15 minutes to crisp.
