Instructions

  1. Add all the jicama, water, sweetener, cinnamon, and butter to a pot and simmer on low, stirring frequently.
  2. As your filling simmers, prepare the dough. Mix the cheese and almond flour in a microwavable bowl and microwave for 1 minute. Stir, then microwave for an additional 30 seconds.
  3. Once your cheese is melted, add your egg and baking powder and stir with a wooden spoon or spatula, or with your hands, until fully incorporated and mixed into a ball.
  4. On a cutting board, place the ball of dough between two slices of parchment paper and roll it out to a pie crust thickness and cut out 3 inch circles.
  5. Once your jicama has simmered for 30 minutes, remove from the heat and stir in butter.
  6. Fill each dough circle with 1 and a half tablespoons of filling and then fold the dough together around the filling and press the edges together to seal. You can also use an empanada press for this.
  7. Heat up the oil over medium heat in a frying pan and start adding the hand pies to the oil with a metal slotted spoon. Allow to fry for 30 seconds per side before removing the pie from the oil onto a plate lined with paper towels.
  8. Allow the pies to cool before serving.
