Instructions

  1. Wash and trim the zucchini.
  2. Shred the zucchini using a grater.
  3. Squeeze the grated zucchini in paper towels to release as much water as possible.
  4. Spread the zucchini on fresh paper towels and sprinkle with salt. Let it sit for 30 minutes to release additional water, before squeezing once again.
  5. In a bowl, mix the parmesan cheese, eggs, scallions, garlic, basil, butter, olive oil, nutmeg, onion powder, and salt. Add the zucchini., stirring to combine.
  6. Shape into patties, and then and cook in a pan over medium heat until brown on both sides.
