Russian Kale Salad is a vibrant addition to any meal, perfect as a side dish or for meal prep. With just 7 grams of carbs per serving, this salad features hardy kale, bright lemon juice, and rich olive oil. Instructions

  1. Remove the tough middle rib of the kale leaves by folding the leaf in half and paring with a knife. Discard ribs.
  2. Slice kale leaves into thin strips and then slice again till they are bite size pieces. Put in large bowl.
  3. Combine the lemon juice, salt and pepper and pour over kale. Mix carefully with two spoons to ensure all leaves are coated.
  4. Refrigerate for at least 3 hours to allow tough fibers to break down. Remove salad from refrigerator 30 minutes before serving to bring to room temperature.
  5. Add almond slivers and enjoy!
