Instructions

  1. To make the dumplings:
  2. In a large bowl, whisk together the almond flour, parsley, baking powder, xanthan gum, salt and pepper.
  3. Add the egg, 1 tablespoon of butter and half cup of heavy cream. Stir until no dry flour remains.
  4. Form dumplings with your hands.
  5. Set aside.
  6. To make the soup:
  7. Melt the remaining butter in a large pot on the stove and then add garlic and onions.
  8. When onions are translucent, add shredded chicken, chicken broth, remaining heavy cream, salt, pepper and remaining xanthan gum.
  9. Simmer on stove for about 25 minutes.
  10. Drop the dumplings into the soup and allow them to cook, uncovered, for about 3-4 minutes.
  11. To serve, garnish each bowl with fresh thyme and enjoy!
