Shabu Shabu, a traditional Japanese beef shirataki noodle soup, is an excellent option for a quick and fulfilling meal. With only 9 grams of carbs per serving, this dish features tender beef slices, cabbage, and the unique texture of shirataki noodles. Perfect for a weeknight dinner, it offers a warming broth that supports low-carb eating, which may aid in weight loss and metabolic health. Instructions

  1. Make 1 cup of Dashi and leave on simmer.
  2. Meanwhile, prepare shirataki noodles by straining out the prepacked liquid and soaking the noodles in cold water. Set aside in a bowl.
  3. Slice beef into ½ inch wide strips and set aside.
  4. Bring Dashi to a boil and add a dash of salt. Once boiling, add shirataki noodles (drained) and cabbage, and cook for about 1-2 minutes.
  5. Next, add sliced beef into Dashi. Cook for about 30-45 seconds for medium-rare beef, or for 2 minutes if you prefer more well-cooked beef.
  6. Put noodles and beef in a bowl for serving.
  7. In a separate bowl, combine 3 tbsp of Dashi soup with 1 tbsp of Ponzu, mix in grated ginger and garlic and pour over noodles and beef. Top with chopped green onions. Enjoy hot/warm!
