Chicken Gratin combines tender chicken thighs, creamy heavy cream, and sharp cheddar cheese for a satisfying meal. At just 8 grams of carbs per serving, this dish is a great option for meal prep or a weeknight dinner. The addition of cauliflower rice and mushrooms enhances the texture while keeping it low in carbs. This recipe not only supports a keto-friendly lifestyle but can also align with your health goals when shared with your care team.

Instructions

  1. Chop green onions, separating the white parts from the green parts, and put them aside in two separate prep bowls.
  2. Cut chicken into bite size pieces (around ½” cubes). Set aside.
  3. In a large frying pan, add butter on medium heat. Once the butter is melted, sauté the chopped white parts of the green onions.
  4. Turn up the heat to medium high and add the chicken. Cook for 2-3 minutes while occasionally stirring so all sides are browned.
  5. Add mushroom, cauliflower rice, salt, and pepper. Cook for another 1-2 minutes until chicken is cooked through. Set aside this gratin mix.
  6. To make the sauce: using a new frying pan or the same pan (emptied), add butter on low heat until melted. Then add soy sauce and parmesan cheese. Slowly add in heavy cream while continuously mixing with spatula on low heat. The sauce should thicken after 2-4 minutes. Once the preferred thickness is reached, remove from heat.
  7. Place gratin mix in an oven-safe glass pan or medium casserole dish. Spread the sauce onto the gratin mix evenly. Sprinkle crushed pork rinds on top followed by shredded sharp cheese.
  8. Place the oven on BROIL and rearrange the rack to be around 6-8" from the heating element. Place the tray in the center of the oven and broil gratin until the cheese is melted, which should be around 3-5 minutes. For serving, top with the chopped green onions.
