Instructions

  1. Use a vegetable peeler to strip a whole cucumber down into 12 strips (6 strips per serving). Choose strips that are solid and even in shape. Arrange the strips in pairs of two, one slightly overlapping the other, making 6 portions total (3 portions per serving). Use paper towels to press into the cucumber strips and soak up all excess moisture.
  2. Microwave the cream cheese for about 15 seconds so it is smooth and pliable. Spread approx. 1 teaspoon of cream cheese across each portion of cucumber strips. Follow with laying pieces of lox over the cream cheese - ⅓ oz lox per portion of strips.
  3. Roll each portion of cucumber up into a sushi-like roll. Sprinkle the everything seasoning over the tops of the rolls for serving.
