Instructions
- Preheat the broiler.
- Heat oil in a medium ovenproof nonstick skillet over medium heat.
- Add in asparagus and cook, covered, for 2-3 minutes, or until the asparagus begins to soften.
- Sprinkle with salt.
- Beat eggs in a large bowl. Add the eggs to the skillet and cook for 3 minutes to set the bottom.
- Reduce heat to medium-low and cook for 3-5 minutes, lifting the edges occasionally and tilting the pan so the uncooked eggs flow to the bottom.
- When the eggs have set around the edges, arrange the goat cheese on top of the frittata.
- Broil 5” from the heat for 2-3 minutes, or until the frittata is lightly browned and the center is set.
