Instructions

  1. Preheat the broiler.
  2. Heat oil in a medium ovenproof nonstick skillet over medium heat.
  3. Add in asparagus and cook, covered, for 2-3 minutes, or until the asparagus begins to soften.
  4. Sprinkle with salt.
  5. Beat eggs in a large bowl. Add the eggs to the skillet and cook for 3 minutes to set the bottom.
  6. Reduce heat to medium-low and cook for 3-5 minutes, lifting the edges occasionally and tilting the pan so the uncooked eggs flow to the bottom.
  7. When the eggs have set around the edges, arrange the goat cheese on top of the frittata.
  8. Broil 5” from the heat for 2-3 minutes, or until the frittata is lightly browned and the center is set.
  9. Serve warm or at room temperature.
