Instructions
- Heat the water to boiling.
- Remove the water from heat, and then sprinkle the gelatin powder in while stirring vigorously, until the powder is dissolved and the solution is clear.
- Put the cream cheese, olive oil, xylitol, and vanilla extract into a food processor. Pour in the hot gelatin solution, and then process until smooth.
- Rinse the berries, pat them dry, and then put them into the bottom of a 9-inch pie dish.
- Pour the warm gelatin-cream cheese mixture over the berries.
- Chill in the refrigerator until the cheesecake sets, about 30-60 minutes.
