Instructions
- To make the dumplings:
- In a large bowl, whisk together the almond flour, parsley, baking powder, xanthan gum, salt and pepper.
- Add the egg, 1 tablespoon of butter and half cup of heavy cream. Stir until no dry flour remains.
- Form dumplings with your hands.
- Set aside.
- To make the soup:
- Melt the remaining butter in a large pot on the stove and then add garlic and onions.
- When onions are translucent, add shredded chicken, chicken broth, remaining heavy cream, salt, pepper and remaining xanthan gum.
- Simmer on stove for about 25 minutes.
- Drop the dumplings into the soup and allow them to cook, uncovered, for about 3-4 minutes.
- To serve, garnish each bowl with fresh thyme and enjoy!
