Instructions

  1. Combine the tofu, 1 tablespoon lemon juice, and mustard in a blender, food processor, or use an immersion blender (stick blender).
  2. Process and stop frequently to scrape down the sides of the container.
  3. With the machine running, add oil a few drops at a time.
  4. Gradually add about 2 tablespoons of the oil in a steady stream.
  5. Slowly add 1 tablespoon of the lemon juice.
  6. Dribble in half of the remaining oil and then the remaining 1 tablespoon lemon juice.
  7. Slowly add the rest of the oil.
  8. Taste and season with salt and pepper.
  9. Store in the refrigerator.
